A strong and bitter flavour with dark green colour is ideal for cooking. The tea buds and little pieces are left after processing Gyokuro or Sencha. As the pieces are small, the nutrition comes out easily and this makes the tea very rich. It is often called Agari and is offered at sushi restaurants in Japan.
A steeping temperature is 70-80℃ for 30 seconds to 1 minute is recommended.
